Co-op Public House is a laid-back, farm-to-table diner that takes pride in using fresh ingredients sourced from its own hydroponic farm. The bartender shared the restaurant’s “co-op” philosophy, emphasizing fair treatment of employees—everyone earns a fair wage in addition to tips, creating a positive, balanced environment. There is an event center and a bakery (building in process) Connected to the restaurant. I stopped by for Sunday brunch. The menu was straightforward and unpretentious. I ordered the steak and eggs, which came with microgreens and a choice of home fries, chips, a yogurt bowl, or fruit. The steak was perfectly cooked and well-seasoned, and the eggs were done just right. The farm-fresh microgreens were crisp and subtle, while the fruit was vibrant and flavorful. With good music, expertly prepared food, relaxed vibes, and genuinely happy staff, Co-op Public House offers an experience worth returning for.

We just had brunch and loved every minute. Sammy was our server and she’s adorable and so personable! Husband had a delicious Bloody Mary and I had the mimosa flight. We had the breakfast sandwich and chicken and waffles. Both were delicious. I’ve seen their recent struggles with reviews but we thoroughly enjoyed our food and experience. Tell Sammy I sent you!

I have been to this restaurant about 5 times in the last 3 months. My kids love the spinach dip and my wife and I love the commitment they make to scratch made items and an effort to grow/source their own produce and herbs organically. We only had one time that service was "slow" and normally have a wonderful experience. The wine list is surprisingly well selected and nothing is overpriced. I REALLY wished as many people as I have seen walk out of there happy would post their positive reviews because I selfishly want this restaurant to succeed. This is a unique Lubbock gem that we are lucky to have and I look forward to going back!

Excellent new spot in the middle of town. Solid beer and wine selection, and my partner can’t stop talking about the chicken she had. My pizza was killer as well. We will definitely be back!

Okay hang on folks, this is a good one. Wife and I just wrapped up date night dinner at Co Op Public House in Lubbock. The place has a unique vibe especially for Lubbock. We arrived at the perfect time and were seated quickly by a friendly hostess and started looking over the still quite small menu. Basically everything looked good and we were hungry...so pretty soon we’d ordered the confit chicken, the beef tenderloin, a margarita pizza, and a sour cream cake for dessert. Pizza came first and it was fantastic! The house-made crust was crisp on the outside and had the perfect chew inside. The pizza sauce was simple, but outstanding...literally think I could drink a cup of it and be thrilled. Toppings were delicious and some incredible Parmesan probably parmesano reggiano, based on taste alone, shedded on top of it all. Delicious doesn’t begin to cover it. But that’s just the beginning. My wife’s chicken was gorgeous, with crisp golden brown skin and litterally falling off the bone at the first touch. It was served atop some thinly sliced potatoes which were saturated with what I assume (but don’t recall from the menu) was a rosemary thyme pesto giving them a green color and a flavor like nothing I’ve ever tried before. They were delicious but mild. The potatoes showed through but the herbs were on full display. My steak was cooked perfectly and delicious with a light brown sauce that I didn’t bother to analyze, just thoroughly enjoyed. Here’s the star of the show: the potatoes that came with that beef tenderloin were whole new potatoes with a capers, (I believe) shallots, and (I believe) parsley. They were a work of art. Think flavor time bombs going off in perfect order through every bite. So delicious and unique. Then dessert. The sour cream cake had a few flakes of salt on top and part of the top was dusted with crushed pistachios. Underneath was a beautifully tart lime curd. The whole thing was a magic show of texture with an amazing creamy, sour, sweet, indescribable deliciousness. Our waitress was a sweetheart and was extremely attentive and helpful. This was a wonderful date night with my love and we both appreciate the staff and chef a ton. We’ll be back and you should get over there quick. Support the good stuff that goes on around here and it’ll stick around and multiply.

So glad I stumbled upon this restaurant. We booked the co-op’s event center for a couples wedding shower. It was the perfect place to host a party! Chef Sal and his team did an amazing job. The food presentation matched the quality and flavors. Our guest had nothing but wonderful things to say about the food, especially the spinach dip and chicken piquillo sandwiches. The strawberry mimosas were also a big hit. The event center is a well appointed unique space with a cozy home feel to it. Think upscale boho without pretense. A private room set apart from the main restaurant, it hosts an intimate atmosphere. It was the perfect layout for our group of 30 people. We were able to add a photo backdrop, gift table and guest sign in area with plenty of space for our guest to mingle freely. We will definitely book this space in the future. ***Photos and floral arrangements courtesy of Colby with Effortless Elegance.
